I saw this recipe on the Lighter Side of Low Carb site not too long ago and thought I would give it a try. I made a couple of changes to the original recipe but nothing major.
My version:
1lb Ground Beef
1 Egg
1/2 of Tomatoes with Green Chilies
1 package of Taco Seasoning
1/2 C Mexican Cheese
2 T Soya Flour
Preheat oven to 350 degrees
Mix egg, ground beef, Soya flour, seasoning and tomatoes until combined
Press half of the meat mixture in a loaf pan. Cover with 1/2 of the cheese
Press remaining meat mixture over cheese
Bake for an 30 mins or until meat begins to shrink from pan sides
Carefully pour out any excess liquid
Add the remaining cheese
Cook for 5 mins
Let rest 10 minutes and serve.
