I was out of Parmesan cheese so I had to think quick.

1 lb ground beef, cooked and drained
1 large eggplant, cut into chunks
1 1/2 C. of Tomato and Basil sauce (low carb sauce of your choice)
2 Large Eggs
2 slices of Sharp Provolone Cheese (that was all I had)
3 slices of Sharp Cheddar Cheese
Italian Seasoning
Brown ground beef and drain. Use eggs mixed with water to create an egg wash. Toss eggplant in wash. Then place in LC flour of your choice. I used soya flour. Deep fry until brown and drain. In an oven safe dish mix ground beef, eggplant, and sauce. Top with cheese and sprinkle with Italian seasoning. Bake at 350 for 20-25 mins or until cheese has browned slightly.
I used my usual seasoning on the eggplant batter and ground beef: adobo, garlic, lawry's, salt, pepper and onion powder.
