Fat Bombs

I got this recipe from Stacy who is a member of one of the groups I belong to. It's one of those things that has to grow on you if you are not a dark chocolate fan. This recipe is meant to be an easy means to get your protein and fat in. I ate one with a cup of coffee for breakfast. Also, I was running low on coconut oil so I only use 1/2 C.




Recipe:

1 C Peanut Butter
1 C Coconut Oil
1 Stick Butter
1/4 C Walnut Pieces

Chocolate Topping
1 Tbl Sugar Free Vanilla Syrup
2 Squares Unsweetened Baker's Chocolate
2 Tbl Butter

Melt peanut butter, coconut oil, and butter until it's easy to mix. Line muffin pan with muffin tins. Place walnut pieces in the bottom of each tin. Fill is tin with PB mixture. Place in fridge until it solidifies. Melt chocolate and butter. Mix in syrup and top each tin with chocolate mixture.

How many does this recipe make? Or, what is a serving size?

You can make 12 in a regular sized muffin pan or 24 small ones in a mini muffin pan. If you are making them without using the wrappers I would buy a silicon muffin pan to make it easy for them to pop out.
